why does bluefin tuna seem to neutralize wasabi? with most fish, a little will go a long way and too much will overpower it. but with bluefin tuna, whether its akami or otoro, i find i can add a small mound of fresh wasabi and it never gets too hot. it just adds that pleasant earthiness.
