we ended up going with Cousin Ellen or just Ellen. Her dad is my first cousin's son, so it depends on whom you consult whether they are my first cousins once removed, or my second cousins/ twice removed, or third cousins.
I call them "baby cousins," born to the wife of one of my "little cousins."
