I'm doing a smoked pernil (pork shoulder) today. Dry brined in annatto, salt, coriander, and black pepper then marinated in a mojo made of confit garlic in olive oil blended with bitter orange juice, recao, cilantro, and parsley.
I'm gonna be smoking it on apple wood and finishing it in the oven.
