The only meal prep that has actually ever worked for me is "make a big veggie soup every Sunday".
You make any kind of soup, with as many roasted/sauteed/chopped whatever vegetables that fit in your biggest pot.
This then becomes the base/sauce for ~a week of meals. Add meat + carbs when serving.
