One of the dishes I am specifically proud of how I make them is mashed potatoes with 2/3-3/4 of a pound of freshly shredded gryuere cheese mixed in.
I once made them for my scout troop with regular preshredded cheddar and wasn't given the chance to eat my own potatoes.
Baked and fried are good too.
