My advice is about not touching/cutting lettuce w/a metal knife unless you're IMMEDIATELY eating every single spot touched. The metal causes a reaction, which is why lettuce knives are sharp, hard plastic. (And don't touch cheese you're not immediately eating--oils on your hands cause mold to grow.)
