Grits are usually made from hominy (*nixtamalized*) corn. Nixtamalization increases the bioavailability of tryptophan and thereby, thiamine.
Wikipedia says the process improvess "flavor and aroma" of corn. (My wife, who comes from grits country, does not agree).
